Fried Rice with Chicken and Vegetables (Riz Frit au Poulet et aux Légumes)

Ingredients
- 2 cups of cooked rice
- 1 cup of diced chicken breast
- 1 cup of mixed vegetables (carrots, peas, bell peppers)
- 2 eggs, beaten
- 3 tablespoons of soy sauce
- 2 tablespoons of vegetable oil
- 1 teaspoon of minced garlic
- 1 teaspoon of grated ginger
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the diced chicken and cook until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the remaining oil, minced garlic, and grated ginger. Sauté for 1-2 minutes until fragrant.
- Add the mixed vegetables and cook until they are tender-crisp.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until cooked, then mix them with the vegetables.
- Add the cooked rice, soy sauce, salt, and black pepper to the skillet. Stir-fry for 3-4 minutes until everything is well combined and heated through.
- Finally, add the cooked chicken back to the skillet and toss everything together. Cook for an additional 2-3 minutes.
- Remove from heat and serve the Riz Frit au Poulet et aux Légumes hot.
