Fried Rice with Chicken and Vegetables (Riz Frit au Poulet et aux Légumes)

Ingredients

  • 2 cups of cooked rice
  • 1 cup of diced chicken breast
  • 1 cup of mixed vegetables (carrots, peas, bell peppers)
  • 2 eggs, beaten
  • 3 tablespoons of soy sauce
  • 2 tablespoons of vegetable oil
  • 1 teaspoon of minced garlic
  • 1 teaspoon of grated ginger
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the diced chicken and cook until browned and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining oil, minced garlic, and grated ginger. Sauté for 1-2 minutes until fragrant.
  4. Add the mixed vegetables and cook until they are tender-crisp.
  5. Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until cooked, then mix them with the vegetables.
  6. Add the cooked rice, soy sauce, salt, and black pepper to the skillet. Stir-fry for 3-4 minutes until everything is well combined and heated through.
  7. Finally, add the cooked chicken back to the skillet and toss everything together. Cook for an additional 2-3 minutes.
  8. Remove from heat and serve the Riz Frit au Poulet et aux Légumes hot.
