Ingredients
- 2 cups cooked white rice, chilled
- 8 ounces shrimp, peeled and deveined
- 1 cup BBQ pork, diced
- 1/2 cup frozen mixed vegetables
- 3 eggs, beaten
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1/2 teaspoon sesame oil
- 1/4 teaspoon white pepper
- 2 tablespoons vegetable oil
- Salt to taste
- Green onions, chopped (for garnish)
Instructions
- In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, and white pepper. Set aside.
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the shrimp and stir-fry until they turn pink. Remove the shrimp from the wok and set aside.
- Heat the remaining tablespoon of vegetable oil in the same wok. Add the garlic and stir-fry until fragrant.
- Add the BBQ pork and frozen mixed vegetables to the wok. Stir-fry for 2-3 minutes.
- Push the ingredients to the side of the wok, pour the beaten eggs into the empty space, and scramble them until they are cooked through.
- Add the chilled cooked rice to the wok. Use a spatula to break up any clumps and stir-fry for 2-3 minutes.
- Pour the sauce mixture over the rice and toss to combine. Add the cooked shrimp back into the wok and stir-fry for another 2-3 minutes.
- Adjust the seasoning with salt if needed. Garnish with chopped green onions before serving.
