Ingredients
- 2 cups cooked rice
- 1/2 pound shrimp, peeled and deveined
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 eggs, beaten
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet or wok over medium heat.
- Add shrimp and garlic, and cook until shrimp turns pink. Remove shrimp from the skillet and set aside.
- Add mixed vegetables to the skillet and stir-fry until tender.
- Push the vegetables to one side of the skillet and pour the beaten eggs onto the other side. Scramble the eggs until cooked.
- Add cooked rice, soy sauce, and sesame oil to the skillet. Stir-fry everything together for a few minutes.
- Finally, add the cooked shrimp back to the skillet and toss everything together. Season with salt and pepper to taste.
- Remove from heat and serve hot.
