Fried Shrimp Rolls (蝦捲)

Ingredients

  • 12 large shrimp, peeled and deveined
  • 12 spring roll wrappers
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 1 egg, beaten
  • Oil for frying

Instructions

  1. In a bowl, mix together the cabbage, carrots, garlic, ginger, soy sauce, oyster sauce, sesame oil, sugar, and black pepper.
  2. Place a spring roll wrapper on a clean surface. Place a spoonful of the vegetable mixture in the center of the wrapper.
  3. Place a shrimp on top of the vegetable mixture.
  4. Roll the wrapper over the filling, tucking in the sides, and brush the edge with beaten egg to seal.
  5. Heat oil in a pan over medium heat. Fry the shrimp rolls until golden brown and crispy, about 3-4 minutes per side.
  6. Remove the rolls from the oil and drain on paper towels.
  7. Serve the shrimp rolls hot with your favorite dipping sauce.
