Ingredients

  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon red pepper flakes
  • 1 teaspoon sugar
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. In three separate shallow dishes, place the flour, beaten eggs, and breadcrumbs.
  2. Season the shrimp with salt, black pepper, and paprika.
  3. Dredge the seasoned shrimp in the flour, dip into the beaten eggs, and coat with breadcrumbs.
  4. Heat vegetable oil in a large skillet over medium heat. Fry the coated shrimp until golden brown and crispy, about 2-3 minutes per side. Remove and set aside.
  5. In the same skillet, sauté the onion and garlic until softened.
  6. Add the diced tomatoes, red pepper flakes, sugar, and salt. Simmer for 10 minutes, stirring occasionally.
  7. Return the fried shrimp to the skillet and toss to coat with the spicy tomato sauce.
  8. Garnish with fresh parsley and serve hot.
