Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 1 teaspoon red pepper flakes
- 1 teaspoon sugar
- Salt to taste
- Fresh parsley for garnish
Instructions
- In three separate shallow dishes, place the flour, beaten eggs, and breadcrumbs.
- Season the shrimp with salt, black pepper, and paprika.
- Dredge the seasoned shrimp in the flour, dip into the beaten eggs, and coat with breadcrumbs.
- Heat vegetable oil in a large skillet over medium heat. Fry the coated shrimp until golden brown and crispy, about 2-3 minutes per side. Remove and set aside.
- In the same skillet, sauté the onion and garlic until softened.
- Add the diced tomatoes, red pepper flakes, sugar, and salt. Simmer for 10 minutes, stirring occasionally.
- Return the fried shrimp to the skillet and toss to coat with the spicy tomato sauce.
- Garnish with fresh parsley and serve hot.
