Fried Stuffed Dough (pugliese Panzerotti)
Fried Stuffed Dough (Pugliese Panzerotti) is a traditional dish from the Pugliese cuisine, featuring crispy fried dough filled with delicious ingredients.
Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon active dry yeast
- 1 teaspoon sugar
- 3/4 cup warm water
- 1 cup mozzarella cheese, shredded
- 1/2 cup tomato sauce
- 1/4 cup pepperoni, diced
- Vegetable oil for frying
Instructions
- In a bowl, mix the flour and salt. In a separate bowl, dissolve the yeast and sugar in warm water. Let it sit for 5 minutes until foamy.
- Pour the yeast mixture into the flour and mix until a dough forms. Knead the dough on a floured surface for 5 minutes, then place it in a greased bowl, cover, and let it rise for 1 hour.
- Divide the dough into 4 equal pieces and roll each piece into a circle. Place a portion of mozzarella, tomato sauce, and pepperoni on one half of each circle, then fold the dough over the filling and press the edges to seal.
- Heat the vegetable oil in a deep skillet over medium-high heat. Fry the stuffed dough in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.
