Frisian Almond Cake (Fryske Amelân Taart)

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 egg
  • 1/2 teaspoon almond extract
  • 1/2 cup almond flour
  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 1 egg white
  • 1/4 cup sliced almonds

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the all-purpose flour and granulated sugar. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Add the egg and almond extract, and mix until the dough comes together.
  4. Press two-thirds of the dough into the bottom and up the sides of a 9-inch tart pan. Set aside.
  5. In another bowl, mix together the almond flour, powdered sugar, softened butter, and egg white until smooth.
  6. Spoon the almond filling into the prepared crust and spread it evenly.
  7. Crumble the remaining dough over the top of the almond filling, then sprinkle with sliced almonds.
  8. Bake for 40 minutes, or until the crust is golden brown.
  9. Allow the cake to cool before slicing and serving.
