Frisian Chicken Satay Skewers (Fryske Kip Saté Spjitten)

Ingredients

  • 1.5 lbs (700g) chicken breast, cut into cubes
  • 1 cup (240ml) coconut milk
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/2 cup (120g) peanut butter
  • 1/4 cup (60ml) water
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine coconut milk, soy sauce, brown sugar, garlic, coriander, turmeric, salt, and pepper. Add the chicken cubes and marinate for at least 1 hour.
  2. Thread the marinated chicken onto the soaked wooden skewers.
  3. In a small saucepan, combine peanut butter and water. Heat over low heat, stirring constantly, until smooth and well combined to make the peanut sauce.
  4. Grill the chicken skewers on a stovetop grill or in a grill pan for about 10-12 minutes, turning occasionally, until cooked through.
  5. Serve the chicken satay skewers with the warm peanut sauce.
