Ingredients
- 1.5 lbs (700g) chicken breast, cut into cubes
- 1 cup (240ml) coconut milk
- 3 tbsp soy sauce
- 2 tbsp brown sugar
- 2 cloves garlic, minced
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/2 cup (120g) peanut butter
- 1/4 cup (60ml) water
- Salt and pepper to taste
- Wooden skewers, soaked in water
Instructions
- In a bowl, combine coconut milk, soy sauce, brown sugar, garlic, coriander, turmeric, salt, and pepper. Add the chicken cubes and marinate for at least 1 hour.
- Thread the marinated chicken onto the soaked wooden skewers.
- In a small saucepan, combine peanut butter and water. Heat over low heat, stirring constantly, until smooth and well combined to make the peanut sauce.
- Grill the chicken skewers on a stovetop grill or in a grill pan for about 10-12 minutes, turning occasionally, until cooked through.
- Serve the chicken satay skewers with the warm peanut sauce.
