Ingredients
- 500g mixed fish fillets (such as cod, haddock, and salmon)
- 2 onions, chopped
- 3 large potatoes, peeled and diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 cups fish or vegetable broth
- 1 cup white wine
- 1/4 cup all-purpose flour
- 1/4 cup butter
- 1/2 cup heavy cream
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onions and cook until they are soft and translucent.
- Sprinkle the flour over the onions and stir to make a roux. Cook for 2-3 minutes to remove the raw flour taste.
- Slowly pour in the white wine while stirring constantly to create a smooth sauce.
- Add the fish and vegetable broth to the pot, then add the diced potatoes, sliced carrots, and chopped celery. Season with salt and pepper.
- Bring the stew to a simmer and cook for 30-40 minutes, or until the vegetables are tender and the fish is cooked through.
- Stir in the heavy cream and let the stew simmer for an additional 5 minutes.
