Frisian Fisherman's Stew (Fryske Fiskerman's Stobber)

Ingredients

  • 500g mixed fish fillets (such as cod, haddock, and salmon)
  • 2 onions, chopped
  • 3 large potatoes, peeled and diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 cups fish or vegetable broth
  • 1 cup white wine
  • 1/4 cup all-purpose flour
  • 1/4 cup butter
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onions and cook until they are soft and translucent.
  2. Sprinkle the flour over the onions and stir to make a roux. Cook for 2-3 minutes to remove the raw flour taste.
  3. Slowly pour in the white wine while stirring constantly to create a smooth sauce.
  4. Add the fish and vegetable broth to the pot, then add the diced potatoes, sliced carrots, and chopped celery. Season with salt and pepper.
  5. Bring the stew to a simmer and cook for 30-40 minutes, or until the vegetables are tender and the fish is cooked through.
  6. Stir in the heavy cream and let the stew simmer for an additional 5 minutes.
  7. Adjust the seasoning if needed, then serve the Fryske Fiskerman's Stobber hot, garnished with chopped fresh parsley.
