Ingredients

- 2 bay leaves

Instructions
- In a bowl, toss the lamb chunks with flour, salt, and pepper until evenly coated.
- In a large Dutch oven, melt the butter over medium heat. Add the lamb chunks and cook until browned on all sides. Remove the lamb from the pot and set aside.
- Add the onions, carrots, and celery to the pot and cook until softened. Stir in the garlic and cook for an additional minute.
- Pour in the beef broth and red wine, then return the lamb to the pot. Add the bay leaves, thyme, and rosemary. Season with salt and pepper.
- Bring the stew to a simmer, then reduce the heat to low. Cover and cook for 2 hours, or until the lamb is tender.
