Ingredients
- 500g bread flour
- 350g water
- 150g active sourdough starter
- 10g salt
Instructions
- In a large bowl, mix the bread flour and water until a shaggy dough forms. Cover and let it rest for 30 minutes.
- Add the sourdough starter and salt to the dough. Knead the dough until smooth and elastic.
- Cover the bowl and let the dough ferment at room temperature for 4 hours, folding the dough every hour.
- Shape the dough into a loaf and place it in a floured banneton or bowl. Let it rise at room temperature for 1 hour, then refrigerate overnight.
- Preheat the oven to 230°C. Score the top of the loaf and bake for 45 minutes, or until the crust is golden brown.
- Let the bread cool completely before slicing and serving.
