Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix the sliced potatoes, leeks, and half of the grated Gouda cheese.
- In a separate bowl, combine the heavy cream, minced garlic, salt, and pepper.
- Layer half of the potato and leek mixture in a greased baking dish. Pour half of the cream mixture over the layer. Repeat with the remaining potato and leek mixture and cream mixture.
- Sprinkle the remaining Gouda cheese on top.
- Cover the baking dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes or until the top is golden and bubbly.
- Let it rest for 10 minutes before serving.
