Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix the sliced potatoes, leeks, and half of the grated Gouda cheese.
  3. In a separate bowl, combine the heavy cream, minced garlic, salt, and pepper.
  4. Layer half of the potato and leek mixture in a greased baking dish. Pour half of the cream mixture over the layer. Repeat with the remaining potato and leek mixture and cream mixture.
  5. Sprinkle the remaining Gouda cheese on top.
  6. Cover the baking dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes or until the top is golden and bubbly.
  7. Let it rest for 10 minutes before serving.
