Ingredients
- 2 lbs chicken, cooked and shredded
- 4 leeks, thinly sliced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/4 cup all-purpose flour
- 2 tablespoons butter
- Salt and pepper to taste
- 2 sheets of puff pastry
Instructions
- In a large skillet, melt the butter over medium heat. Add the leeks and cook until softened.
- Sprinkle the flour over the leeks and stir to combine. Cook for 1-2 minutes.
- Pour in the chicken broth and heavy cream, stirring constantly until the mixture thickens.
- Add the shredded chicken to the skillet and stir to combine. Season with salt and pepper to taste.
- Preheat the oven to 375°F (190°C).
- Line a pie dish with one sheet of puff pastry. Pour the chicken and leek mixture into the dish.
- Place the second sheet of puff pastry over the filling and crimp the edges to seal. Cut a few slits in the top to allow steam to escape.
- Bake for 45-50 minutes, or until the pastry is golden brown and the filling is bubbling.
- Let the pie cool for a few minutes before slicing and serving.
