Ingredients

  • 2 pounds fresh clams, scrubbed
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 2 potatoes, diced
  • 2 cups fish or vegetable stock
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.
  2. Add the diced onion to the pot and cook until softened.
  3. Add the diced potatoes and stock to the pot. Bring to a boil, then reduce the heat and simmer until the potatoes are tender.
  4. Add the clams to the pot, cover, and cook for 5-10 minutes, or until the clams have opened. Discard any clams that do not open.
  5. Remove the clams from the pot, shuck them, and chop the meat. Return the chopped clams to the pot.
  6. Stir in the heavy cream and season the chowder with salt and pepper to taste.
  7. Simmer for a few more minutes until heated through.
  8. Serve the chowder hot, garnished with the crispy bacon and chopped fresh parsley.
