Ingredients
- 2 pounds fresh clams, scrubbed
- 4 slices bacon, chopped
- 1 onion, diced
- 2 potatoes, diced
- 2 cups fish or vegetable stock
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.
- Add the diced onion to the pot and cook until softened.
- Add the diced potatoes and stock to the pot. Bring to a boil, then reduce the heat and simmer until the potatoes are tender.
- Add the clams to the pot, cover, and cook for 5-10 minutes, or until the clams have opened. Discard any clams that do not open.
- Remove the clams from the pot, shuck them, and chop the meat. Return the chopped clams to the pot.
- Stir in the heavy cream and season the chowder with salt and pepper to taste.
- Simmer for a few more minutes until heated through.
- Serve the chowder hot, garnished with the crispy bacon and chopped fresh parsley.
