Ingredients
- 1 head of cabbage
- 1 cup cooked rice
- 1 onion, finely chopped
- 1 carrot, grated
- 1/2 cup mushrooms, finely chopped
- 1/2 cup vegetable broth
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Boil a large pot of water. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes, until they are pliable. Remove and set aside to cool.
- In a large bowl, mix the cooked rice, chopped onion, grated carrot, chopped mushrooms, vegetable broth, paprika, salt, and pepper.
- Place a spoonful of the rice mixture onto each cabbage leaf and roll them up, tucking in the sides to form a neat roll.
- Place the cabbage rolls in a large pot, seam side down. Pour in enough vegetable broth to cover the rolls. Cover and simmer for 1 hour, until the cabbage is tender.
- Serve the Fryske Koolrulle hot, with a side of mashed potatoes or crusty bread.
