Ingredients

  • 500g fresh rhubarb, chopped
  • 100g granulated sugar
  • 1 tsp vanilla extract
  • 150g all-purpose flour
  • 100g unsalted butter, cold and diced
  • 50g rolled oats
  • 50g brown sugar
  • 1/2 tsp ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix the chopped rhubarb with granulated sugar and vanilla extract. Transfer the mixture to a baking dish.
  3. In a separate bowl, combine the flour, cold diced butter, rolled oats, brown sugar, cinnamon, and a pinch of salt. Use your fingers to rub the butter into the dry ingredients until it resembles coarse breadcrumbs.
  4. Sprinkle the crumble mixture evenly over the rhubarb in the baking dish.
  5. Bake in the preheated oven for 40 minutes or until the rhubarb is tender and the crumble topping is golden brown.
  6. Remove from the oven and let it cool for a few minutes before serving.
