Ingredients
- 500g fresh rhubarb, chopped
- 100g granulated sugar
- 1 tsp vanilla extract
- 150g all-purpose flour
- 100g unsalted butter, cold and diced
- 50g rolled oats
- 50g brown sugar
- 1/2 tsp ground cinnamon
- Pinch of salt
Instructions
- Preheat the oven to 180°C (350°F).
- In a bowl, mix the chopped rhubarb with granulated sugar and vanilla extract. Transfer the mixture to a baking dish.
- In a separate bowl, combine the flour, cold diced butter, rolled oats, brown sugar, cinnamon, and a pinch of salt. Use your fingers to rub the butter into the dry ingredients until it resembles coarse breadcrumbs.
- Sprinkle the crumble mixture evenly over the rhubarb in the baking dish.
- Bake in the preheated oven for 40 minutes or until the rhubarb is tender and the crumble topping is golden brown.
- Remove from the oven and let it cool for a few minutes before serving.
