Instructions

- Slowly pour in the fish or vegetable stock while stirring constantly to avoid lumps.
- Add the diced potatoes and smoked haddock fillets to the pot. Bring to a simmer and cook for 15-20 minutes, or until the potatoes are tender.
- Pour in the heavy cream and stir gently to combine. Season with salt and pepper to taste.
- Simmer for an additional 5-10 minutes until the chowder has thickened slightly.
- Remove from heat and ladle the chowder into bowls. Garnish with fresh parsley and serve hot.
