Ingredients

  • 1/2 teaspoon turmeric
  • 4 cups fish or seafood broth
  • 1/2 lb mussels, cleaned and debearded
  • 1/2 lb clams, cleaned
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb white fish fillets, cut into chunks
  • 1/4 cup fresh parsley, chopped
  • Lemon wedges, for serving
  • Salt and pepper to taste

Instructions

  1. In a large paella pan, heat some olive oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until softened.
  2. Add the saffron, paprika, and turmeric. Stir to combine with the vegetables.
  3. Stir in the Arborio rice and cook for 1-2 minutes.
  4. Pour in the fish or seafood broth and bring to a simmer. Cook for 15-20 minutes, stirring occasionally, until the rice is almost tender and most of the liquid has been absorbed.
  5. Add the mussels, clams, shrimp, and white fish to the pan. Cover and cook for 5-7 minutes, or until the seafood is cooked through and the shells have opened.
  6. Remove from heat and let the paella rest for a few minutes. Sprinkle with chopped parsley and serve with lemon wedges.
