Ingredients

  • 3 cups fresh spinach, chopped
  • 1 onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon sumac
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon ground cumin
  • 1/4 cup pine nuts, toasted
  • 1 package (16 ounces) store-bought pizza dough

Instructions

  1. In a skillet, sauté the chopped onion in olive oil until translucent.
  2. Add the chopped spinach to the skillet and cook until wilted.
  3. Stir in the sumac, salt, black pepper, cayenne pepper, and ground cumin. Cook for an additional 2 minutes.
  4. Remove the skillet from heat and stir in the toasted pine nuts. Let the spinach mixture cool.
  5. Preheat the oven to 375°F (190°C).
  6. Divide the pizza dough into 12 equal pieces and roll each piece into a small circle.
  7. Place a spoonful of the spinach mixture in the center of each dough circle.
  8. Pinch the edges of the dough together to form a triangle, enclosing the spinach filling.
  9. Place the fatayer on a baking sheet and bake for 15-20 minutes, or until golden brown.
  10. Remove from the oven and let cool slightly before serving.
