Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 cubes of fermented bean curd
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 tablespoon sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, sliced
  • 2 green onions, chopped
  • 1 tablespoon vegetable oil
  • 1/2 cup water

Instructions

  1. In a bowl, mix the fermented bean curd, soy sauce, Shaoxing wine, sugar, sesame oil, and cornstarch to make a marinade.
  2. Place the chicken thighs in a large resealable plastic bag and pour the marinade over the chicken. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 30 minutes.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add the garlic, ginger, and green onions, and sauté until fragrant.
  4. Add the marinated chicken thighs to the skillet, skin side down, and sear until golden brown, about 5 minutes.
  5. Flip the chicken thighs, add water to the skillet, cover, and simmer for 30 minutes, or until the chicken is cooked through.
  6. Uncover the skillet and continue to cook for an additional 10 minutes to reduce the sauce and thicken it.
  7. Transfer the chicken to a serving platter, garnish with additional green onions, and serve hot.
