Ingredients
- 4 chicken thighs, bone-in and skin-on
- 2 cubes of fermented bean curd
- 2 tablespoons soy sauce
- 1 tablespoon Shaoxing wine
- 1 tablespoon sugar
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 3 cloves garlic, minced
- 1-inch piece of ginger, sliced
- 2 green onions, chopped
- 1 tablespoon vegetable oil
- 1/2 cup water
Instructions
- In a bowl, mix the fermented bean curd, soy sauce, Shaoxing wine, sugar, sesame oil, and cornstarch to make a marinade.
- Place the chicken thighs in a large resealable plastic bag and pour the marinade over the chicken. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 30 minutes.
- Heat vegetable oil in a large skillet over medium-high heat. Add the garlic, ginger, and green onions, and sauté until fragrant.
- Add the marinated chicken thighs to the skillet, skin side down, and sear until golden brown, about 5 minutes.
- Flip the chicken thighs, add water to the skillet, cover, and simmer for 30 minutes, or until the chicken is cooked through.
- Uncover the skillet and continue to cook for an additional 10 minutes to reduce the sauce and thicken it.
- Transfer the chicken to a serving platter, garnish with additional green onions, and serve hot.
