Fuchka
Fuchka, also known as puchka or golgappa, is a popular street food in South Asia. It consists of crispy hollow puris filled with a spicy and tangy mixture of tamarind water, chickpeas, potatoes, and spices.
Ingredients
- 1 cup semolina
- 1/2 cup all-purpose flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 cup boiled chickpeas
- 1/2 cup boiled and diced potatoes
- 1/4 cup tamarind chutney
- 1 tsp chaat masala
- 1/2 tsp red chili powder
- 1/2 tsp cumin powder
- 1/4 cup chopped coriander leaves
- 2 cups water
Instructions
- In a bowl, mix semolina, all-purpose flour, salt, and baking soda. Add water and knead into a stiff dough. Cover and let it rest for 20 minutes.
- Divide the dough into small balls and roll out into small puris. Deep fry the puris until they puff up and turn golden brown. Drain on paper towels and let them cool.
- In a bowl, mix boiled chickpeas, boiled potatoes, tamarind chutney, chaat masala, red chili powder, cumin powder, and chopped coriander leaves.
- Make a small hole in the center of each puri and fill it with the chickpea-potato mixture.
- Dip the filled puris in tamarind water and serve immediately.
