Fujian-style Fried Rice Cakes (福建炒年糕)

Ingredients

  • 1 pound rice cakes
  • 4 ounces pork, thinly sliced
  • 2 cloves garlic, minced
  • 2 cups napa cabbage, sliced
  • 3 scallions, cut into 2-inch pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon white pepper
  • 1/4 cup chicken broth
  • 2 tablespoons vegetable oil

Instructions

  1. Soak the rice cakes in warm water for 15 minutes, then drain.
  2. Heat 1 tablespoon of vegetable oil in a wok over high heat. Add the pork and stir-fry until cooked. Remove from the wok and set aside.
  3. Heat the remaining oil in the wok, then add the garlic and stir-fry until fragrant.
  4. Add the napa cabbage and scallions, and stir-fry for 2-3 minutes.
  5. Add the rice cakes, soy sauce, oyster sauce, sugar, and white pepper. Stir-fry for 2-3 minutes.
  6. Pour in the chicken broth and continue to stir-fry until the rice cakes are tender and the liquid has been absorbed.
  7. Return the cooked pork to the wok and stir to combine.
  8. Transfer to a serving dish and serve hot.
