福建炒米粉 (Fujian-style Fried Rice Noodles) is a classic dish from Fujian Cuisine, known for its delicate flavors and fresh ingredients.
Ingredients
- 400g rice noodles
- 200g shrimp, peeled and deveined
- 100g pork, thinly sliced
- 2 eggs, beaten
- 1 cup bean sprouts
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cooking oil
- 1/2 teaspoon sugar
- Salt and pepper to taste
Instructions
- Soak the rice noodles in hot water for 5 minutes, then drain and set aside.
- Heat the cooking oil in a wok or large skillet over medium-high heat.
- Add the garlic and stir-fry until aromatic.
- Add the shrimp and pork, and stir-fry until cooked through.
- Push the ingredients to the side of the wok, pour the beaten eggs into the empty space, and scramble until set.
- Add the drained rice noodles, bean sprouts, soy sauce, oyster sauce, sugar, salt, and pepper. Stir-fry until well combined and heated through.
- Adjust seasoning if necessary, then transfer to a serving dish.
