Fujian-style Oyster Omelette (福建蚝煎)

Ingredients

  • 8 fresh oysters
  • 4 large eggs
  • 1/4 cup tapioca starch
  • 1/4 cup water
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 tablespoons cooking oil
  • 2 stalks scallions, chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup sweet chili sauce (optional, for serving)

Instructions

  1. In a small bowl, mix tapioca starch with water to create a slurry. Set aside.
  2. In a separate bowl, beat the eggs and season with salt and white pepper.
  3. Heat 1 tablespoon of cooking oil in a non-stick pan over medium heat.
  4. Add the oysters to the pan and cook for 1-2 minutes until they start to curl at the edges. Remove from the pan and set aside.
  5. Heat the remaining 1 tablespoon of cooking oil in the same pan.
  6. Pour the beaten eggs into the pan and swirl to create an even layer.
  7. Once the eggs start to set, pour the tapioca starch slurry over the eggs.
  8. Add the cooked oysters, scallions, and cilantro on top of the omelette.
  9. Cook for another 2-3 minutes until the bottom is golden brown and crispy.
  10. Carefully flip the omelette and cook for an additional 2-3 minutes.
  11. Slide the omelette onto a serving plate and drizzle with sweet chili sauce if desired.
