Ingredients
- 8 fresh oysters
- 4 large eggs
- 1/4 cup tapioca starch
- 1/4 cup water
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 2 tablespoons cooking oil
- 2 stalks scallions, chopped
- 1/4 cup cilantro, chopped
- 1/4 cup sweet chili sauce (optional, for serving)
Instructions
- In a small bowl, mix tapioca starch with water to create a slurry. Set aside.
- In a separate bowl, beat the eggs and season with salt and white pepper.
- Heat 1 tablespoon of cooking oil in a non-stick pan over medium heat.
- Add the oysters to the pan and cook for 1-2 minutes until they start to curl at the edges. Remove from the pan and set aside.
- Heat the remaining 1 tablespoon of cooking oil in the same pan.
- Pour the beaten eggs into the pan and swirl to create an even layer.
- Once the eggs start to set, pour the tapioca starch slurry over the eggs.
- Add the cooked oysters, scallions, and cilantro on top of the omelette.
- Cook for another 2-3 minutes until the bottom is golden brown and crispy.
- Carefully flip the omelette and cook for an additional 2-3 minutes.
- Slide the omelette onto a serving plate and drizzle with sweet chili sauce if desired.
