Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh mint, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Chop the mushroom stems finely.
  3. Heat olive oil in a pan over medium heat and sauté the onion and garlic until softened.
  4. Add the chopped mushroom stems and cook for 5 minutes.
  5. Remove from heat and stir in the feta cheese, parsley, mint, salt, and pepper.
  6. Stuff the mushroom caps with the feta mixture and place them on a baking sheet.
  7. Bake for 20-25 minutes until the mushrooms are tender and the filling is golden brown.
