Ingredients

  • 1 lb pork belly
  • 8 cups chicken broth
  • 4 servings of ramen noodles
  • 4 soft-boiled eggs
  • 1 cup chopped green onions
  • 1/4 cup pickled ginger
  • 1/4 cup soy sauce
  • 2 tbsp mirin
  • 1 tbsp sesame oil
  • 1 tbsp chili oil
  • 1 tsp grated garlic
  • 1 tsp grated ginger
  • Salt and pepper to taste

Instructions

  1. Prepare the pork belly by seasoning with salt and pepper, then sear in a hot pan until browned on all sides. Transfer to a large pot.
  2. Add chicken broth, soy sauce, mirin, sesame oil, chili oil, grated garlic, and grated ginger to the pot with the pork belly. Bring to a boil, then reduce heat and simmer for 2-3 hours until the pork is tender.
  3. Cook the ramen noodles according to the package instructions, then divide among serving bowls.
  4. Top the noodles with the pork belly slices, soft-boiled eggs, green onions, and pickled ginger.
  5. Ladle the hot broth over the noodles and serve immediately.
