Ingredients
- 1 lb pork belly
- 8 cups chicken broth
- 4 servings of ramen noodles
- 4 soft-boiled eggs
- 1 cup chopped green onions
- 1/4 cup pickled ginger
- 1/4 cup soy sauce
- 2 tbsp mirin
- 1 tbsp sesame oil
- 1 tbsp chili oil
- 1 tsp grated garlic
- 1 tsp grated ginger
- Salt and pepper to taste
Instructions
- Prepare the pork belly by seasoning with salt and pepper, then sear in a hot pan until browned on all sides. Transfer to a large pot.
- Add chicken broth, soy sauce, mirin, sesame oil, chili oil, grated garlic, and grated ginger to the pot with the pork belly. Bring to a boil, then reduce heat and simmer for 2-3 hours until the pork is tender.
- Cook the ramen noodles according to the package instructions, then divide among serving bowls.
- Top the noodles with the pork belly slices, soft-boiled eggs, green onions, and pickled ginger.
- Ladle the hot broth over the noodles and serve immediately.
