Ingredients
- 200g sushi-grade tuna
- 1 ripe avocado
- 1 mango
- 1/4 cup soy sauce
- 2 tbsp sesame oil
- 1 tsp wasabi paste
- 1/4 cup pickled ginger
- 1/4 cup chopped cilantro
- 1/4 cup chopped scallions
- 1/2 cup sushi rice
- 1 cup water
Instructions
- Cook the sushi rice according to package instructions and let it cool.
- Cut the tuna, avocado, and mango into small cubes and set aside.
- In a small bowl, mix the soy sauce, sesame oil, and wasabi paste to make the dressing.
- In a large mixing bowl, gently toss the tuna, avocado, mango, pickled ginger, cilantro, and scallions with the dressing.
- To assemble, place a ring mold on a plate and fill it with the sushi rice. Press down gently to form a base.
- Carefully remove the mold and top the rice with the tuna-avocado-mango mixture.
- Garnish with additional cilantro and scallions, if desired, and serve immediately.
