Ingredients

  • 4 ripe plantains
  • 1 cup groundnut paste
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 cup vegetable oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut off the ends of the plantains and make a long slit along the length of each plantain, being careful not to cut all the way through.
  3. Stuff the plantains with the groundnut paste.
  4. Place the stuffed plantains on a baking sheet and bake for 20-25 minutes, or until the plantains are tender.
  5. While the plantains are baking, prepare the groundnut sauce. In a saucepan, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
  6. Add the diced tomatoes, ground ginger, ground cumin, and salt to the saucepan. Cook for 5-7 minutes, until the tomatoes are soft and the flavors have melded together.
  7. Serve the baked stuffed plantains with the groundnut sauce on top.
