Futu (stuffed Plantains With Groundnut Sauce)

Ingredients
- 4 ripe plantains
- 1 cup groundnut paste
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1 teaspoon ground ginger
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 cup vegetable oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut off the ends of the plantains and make a long slit along the length of each plantain, being careful not to cut all the way through.
- Stuff the plantains with the groundnut paste.
- Place the stuffed plantains on a baking sheet and bake for 20-25 minutes, or until the plantains are tender.
- While the plantains are baking, prepare the groundnut sauce. In a saucepan, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
- Add the diced tomatoes, ground ginger, ground cumin, and salt to the saucepan. Cook for 5-7 minutes, until the tomatoes are soft and the flavors have melded together.
- Serve the baked stuffed plantains with the groundnut sauce on top.
