Ingredients
- 1 cup green beans, trimmed and halved
- 2 medium potatoes, peeled and cut into chunks
- 1 cup bean sprouts
- 1 cucumber, thinly sliced
- 1 block firm tofu, cut into cubes
- 4 hard-boiled eggs, halved
- 1 cup shredded cabbage
- 1 cup cherry tomatoes, halved
- 1/2 cup roasted peanuts, crushed
Instructions
- Boil the green beans and potatoes in separate pots until tender, then drain and set aside.
- Blanch the bean sprouts in boiling water for 1 minute, then drain and rinse with cold water.
- In a large serving platter, arrange the cooked green beans, potatoes, blanched bean sprouts, sliced cucumber, tofu cubes, hard-boiled eggs, shredded cabbage, and cherry tomatoes.
- Sprinkle the crushed peanuts over the top of the salad.
