Gado Gado Salad (indonesian-style Gado Gado Salad)

Ingredients

  • 1 cup green beans, trimmed and halved
  • 2 medium potatoes, peeled and cut into chunks
  • 1 cup bean sprouts
  • 1 cucumber, thinly sliced
  • 1 block firm tofu, cut into cubes
  • 4 hard-boiled eggs, halved
  • 1 cup shredded cabbage
  • 1 cup cherry tomatoes, halved
  • 1/2 cup roasted peanuts, crushed

Instructions

  1. Boil the green beans and potatoes in separate pots until tender, then drain and set aside.
  2. Blanch the bean sprouts in boiling water for 1 minute, then drain and rinse with cold water.
  3. In a large serving platter, arrange the cooked green beans, potatoes, blanched bean sprouts, sliced cucumber, tofu cubes, hard-boiled eggs, shredded cabbage, and cherry tomatoes.
  4. Sprinkle the crushed peanuts over the top of the salad.
