Gaelic Guinness Beef Stew

Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 3 tbsp all-purpose flour
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 4 garlic cloves, minced
- 4 cups beef broth
- 1 cup Guinness stout
- 2 large carrots, peeled and sliced
- 2 parsnips, peeled and sliced
- 2 large potatoes, peeled and cubed
- 2 sprigs fresh thyme
- Salt and pepper to taste
Instructions
- In a large bowl, toss the beef cubes with the flour until evenly coated.
- Heat the vegetable oil in a large Dutch oven over medium-high heat. Add the beef cubes in batches and brown on all sides. Remove the beef and set aside.
- Add the chopped onion to the Dutch oven and sauté until softened. Add the minced garlic and cook for an additional minute.
- Pour in the beef broth and Guinness stout, scraping up any browned bits from the bottom of the pot.
- Return the browned beef to the pot. Add the carrots, parsnips, potatoes, and thyme. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through.
- Discard the thyme sprigs and adjust the seasoning if needed before serving.
