Gaelic Guinness Beef Stew

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 3 tbsp all-purpose flour
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 4 cups beef broth
  • 1 cup Guinness stout
  • 2 large carrots, peeled and sliced
  • 2 parsnips, peeled and sliced
  • 2 large potatoes, peeled and cubed
  • 2 sprigs fresh thyme
  • Salt and pepper to taste

Instructions

  1. In a large bowl, toss the beef cubes with the flour until evenly coated.
  2. Heat the vegetable oil in a large Dutch oven over medium-high heat. Add the beef cubes in batches and brown on all sides. Remove the beef and set aside.
  3. Add the chopped onion to the Dutch oven and sauté until softened. Add the minced garlic and cook for an additional minute.
  4. Pour in the beef broth and Guinness stout, scraping up any browned bits from the bottom of the pot.
  5. Return the browned beef to the pot. Add the carrots, parsnips, potatoes, and thyme. Season with salt and pepper.
  6. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through.
  7. Discard the thyme sprigs and adjust the seasoning if needed before serving.
