Gagauz-style Meat Pie (Çiğ börek)

Ingredients

  • 500g ground beef
  • 1 onion, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 cup water
  • 1 package of phyllo dough
  • Vegetable oil for frying

Instructions

  1. In a skillet, cook the ground beef and onion over medium heat until the meat is browned and the onion is soft. Drain any excess fat.
  2. Season the meat with salt, black pepper, and paprika. Add water and simmer for 5 minutes. Remove from heat and let it cool.
  3. Take one sheet of phyllo dough and place a spoonful of the meat mixture at one end. Fold the dough over the filling to form a triangle, then continue folding to the end of the dough. Repeat with the remaining dough and filling.
  4. Heat vegetable oil in a large skillet over medium-high heat. Fry the börek in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
  5. Serve the çiğ börek hot and crispy.
