Gagauz-style Meat Pie (Çiğ börek)
Çiğ börek is a traditional Gagauz meat pie that is popular in Gagauz cuisine. It is a savory pastry filled with seasoned ground meat and onions, then fried until golden and crispy.
Ingredients
- 500g ground beef
- 1 onion, finely chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 cup water
- 1 package of phyllo dough
- Vegetable oil for frying
Instructions
- In a skillet, cook the ground beef and onion over medium heat until the meat is browned and the onion is soft. Drain any excess fat.
- Season the meat with salt, black pepper, and paprika. Add water and simmer for 5 minutes. Remove from heat and let it cool.
- Take one sheet of phyllo dough and place a spoonful of the meat mixture at one end. Fold the dough over the filling to form a triangle, then continue folding to the end of the dough. Repeat with the remaining dough and filling.
- Heat vegetable oil in a large skillet over medium-high heat. Fry the börek in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
- Serve the çiğ börek hot and crispy.
