Gahori Mangxo (assamese Style Beef Curry)

Ingredients

  • 500g beef, cut into cubes
  • 2 onions, finely chopped
  • 3-4 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 2 tomatoes, chopped
  • 2-3 tablespoons mustard oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat mustard oil in a pan and add the chopped onions. Sauté until golden brown.
  2. Add the ginger-garlic paste and green chilies. Cook for 2-3 minutes.
  3. Add the beef cubes and cook until they are browned on all sides.
  4. Stir in the turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Cook for 5 minutes.
  5. Add the chopped tomatoes and cook until they turn soft and the oil separates from the masala.
  6. Pour in 2 cups of water, cover the pan, and let the beef simmer until tender.
  7. Sprinkle garam masala and garnish with fresh coriander leaves before serving.
