Gahori Tenga (assamese Style Mutton Stew)

Ingredients

  • 500g mutton, cut into pieces
  • 2 tomatoes, chopped
  • 2 potatoes, peeled and cubed
  • 1 onion, sliced
  • 2 green chilies, slit
  • 1-inch ginger, grated
  • 1 teaspoon mustard oil
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon fenugreek seeds
  • 4-5 cups water
  • Salt to taste

Instructions

  1. Heat mustard oil in a pot and add cumin seeds and fenugreek seeds. Let them splutter.
  2. Add sliced onions, green chilies, and grated ginger. Sauté until the onions turn golden brown.
  3. Add the mutton pieces and turmeric powder. Cook until the mutton is browned.
  4. Add chopped tomatoes and cook until they turn soft.
  5. Add water, salt, and cubed potatoes. Cover and cook until the mutton and potatoes are tender.
  6. Once done, adjust the seasoning and serve hot with steamed rice.
