Gai Pad Prik (thai Red Curry Chicken)
Gai Pad Prik, also known as Thai Red Curry Chicken, is a popular dish in Pakistani Chinese cuisine. This flavorful and aromatic dish is made with tender chicken cooked in a rich and spicy red curry sauce, infused with the vibrant flavors of Thai cuisine.
Ingredients
- 1 lb boneless, skinless chicken breasts, thinly sliced
- 2 tbsp red curry paste
- 1 can (14 oz) coconut milk
- 1 red bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 cup fresh basil leaves
- 2 tbsp vegetable oil
- Salt to taste
Instructions
- Heat vegetable oil in a large pan over medium heat. Add garlic and ginger, and sauté for 1-2 minutes until fragrant.
- Add the red curry paste and cook for another 2 minutes.
- Add the sliced chicken and cook until it is no longer pink.
- Pour in the coconut milk, soy sauce, fish sauce, and brown sugar. Stir to combine and bring to a simmer.
- Add the sliced bell pepper and onion, and cook for 5-7 minutes until the vegetables are tender-crisp.
- Stir in the fresh basil leaves and season with salt to taste.
- Serve the Gai Pad Prik hot over steamed rice.
