Ingredients

  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 2 tbsp red curry paste
  • 1 can (14 oz) coconut milk
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 cup fresh basil leaves
  • 2 tbsp vegetable oil
  • Salt to taste

Instructions

  1. Heat vegetable oil in a large pan over medium heat. Add garlic and ginger, and sauté for 1-2 minutes until fragrant.
  2. Add the red curry paste and cook for another 2 minutes.
  3. Add the sliced chicken and cook until it is no longer pink.
  4. Pour in the coconut milk, soy sauce, fish sauce, and brown sugar. Stir to combine and bring to a simmer.
  5. Add the sliced bell pepper and onion, and cook for 5-7 minutes until the vegetables are tender-crisp.
  6. Stir in the fresh basil leaves and season with salt to taste.
  7. Serve the Gai Pad Prik hot over steamed rice.
