Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 3 stalks lemongrass, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground white pepper
  • 1/4 cup coconut milk
  • 2 tablespoons vegetable oil
  • 1 lime, cut into wedges

Instructions

  1. In a bowl, combine lemongrass, garlic, fish sauce, soy sauce, oyster sauce, brown sugar, turmeric, white pepper, and coconut milk to make the marinade.
  2. Add the chicken thighs to the marinade, making sure they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat. Brush the grates with oil to prevent sticking.
  4. Grill the chicken thighs for 6-8 minutes per side, or until fully cooked and charred in spots. Baste with the remaining marinade while grilling.
  5. Remove the chicken from the grill and let it rest for a few minutes. Serve with lime wedges.
