Ingredients
- 4 bone-in, skin-on chicken thighs
- 3 stalks lemongrass, finely chopped
- 4 cloves garlic, minced
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon brown sugar
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground white pepper
- 1/4 cup coconut milk
- 2 tablespoons vegetable oil
- 1 lime, cut into wedges
Instructions
- In a bowl, combine lemongrass, garlic, fish sauce, soy sauce, oyster sauce, brown sugar, turmeric, white pepper, and coconut milk to make the marinade.
- Add the chicken thighs to the marinade, making sure they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat. Brush the grates with oil to prevent sticking.
- Grill the chicken thighs for 6-8 minutes per side, or until fully cooked and charred in spots. Baste with the remaining marinade while grilling.
- Remove the chicken from the grill and let it rest for a few minutes. Serve with lime wedges.
