Galbi Jjim

Ingredients

  • 2 lbs beef short ribs
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup rice wine
  • 8 garlic cloves, minced
  • 1 onion, sliced
  • 2 carrots, cut into chunks
  • 4 potatoes, peeled and cut into chunks
  • 4 shiitake mushrooms, sliced
  • 2 green onions, chopped

Instructions

  1. Preheat the stovetop to medium-high heat.
  2. Season the short ribs with salt and pepper, then sear them in a large pot until browned on all sides.
  3. In a bowl, mix together soy sauce, brown sugar, rice wine, and garlic. Pour the mixture over the browned short ribs.
  4. Add the onion, carrots, and shiitake mushrooms to the pot. Cover and simmer for 1.5 hours.
  5. Add the potatoes and continue to simmer for another 30 minutes, or until the meat is tender and the potatoes are cooked through.
  6. Garnish with chopped green onions before serving.
