Galbi Tang (갈비탕)

Ingredients

  • 2 lbs beef short ribs
  • 8 cups water
  • 1 onion, sliced
  • 4 green onions, cut into 2-inch pieces
  • 1 daikon radish, peeled and sliced
  • 4 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp black pepper
  • 1 tsp salt

Instructions

  1. In a large pot, bring the water to a boil.
  2. Add the beef short ribs and boil for 5 minutes to remove any impurities. Then, drain and rinse the ribs under cold water.
  3. Return the ribs to the pot and add the onion, green onions, daikon radish, garlic, soy sauce, sesame oil, black pepper, and salt.
  4. Bring the soup to a boil, then reduce the heat to low and simmer for 1.5 to 2 hours, or until the meat is tender.
  5. Skim off any fat or foam that rises to the surface during cooking.
  6. Once the meat is tender, remove it from the pot and shred it into bite-sized pieces. Return the meat to the pot.
  7. Adjust the seasoning with more salt or soy sauce if needed.
  8. Serve the 갈비탕 (Galbi Tang) hot, garnished with additional sliced green onions if desired.
