Galbitang
Galbitang is a traditional Korean soup made with beef short ribs and a variety of vegetables. It's a hearty and flavorful dish that is perfect for a comforting meal.
Ingredients
- 2 lbs beef short ribs
- 8 cups water
- 1 onion, sliced
- 3 garlic cloves, minced
- 1 daikon radish, peeled and sliced
- 2 carrots, sliced
- 4 green onions, cut into 2-inch pieces
- 1/4 cup soy sauce
- 1 tbsp sesame oil
- Salt and pepper to taste
Instructions
- In a large pot, bring the water to a boil.
- Add the beef short ribs and boil for 5 minutes, then discard the water and rinse the ribs under cold water.
- Return the ribs to the pot and add the onion, garlic, daikon radish, and carrots.
- Pour in the soy sauce and sesame oil, then add salt and pepper to taste.
- Simmer the soup over medium heat for 1.5 to 2 hours, until the meat is tender.
- Add the green onions and cook for an additional 5 minutes.
- Remove from heat and serve hot.
