Galbitang is a traditional Korean soup made with beef short ribs and a variety of vegetables. It's a hearty and flavorful dish that is perfect for a comforting meal.

Ingredients

  • 2 lbs beef short ribs
  • 8 cups water
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1 daikon radish, peeled and sliced
  • 2 carrots, sliced
  • 4 green onions, cut into 2-inch pieces
  • 1/4 cup soy sauce
  • 1 tbsp sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the water to a boil.
  2. Add the beef short ribs and boil for 5 minutes, then discard the water and rinse the ribs under cold water.
  3. Return the ribs to the pot and add the onion, garlic, daikon radish, and carrots.
  4. Pour in the soy sauce and sesame oil, then add salt and pepper to taste.
  5. Simmer the soup over medium heat for 1.5 to 2 hours, until the meat is tender.
  6. Add the green onions and cook for an additional 5 minutes.
  7. Remove from heat and serve hot.
