Galbitang Beef Short Rib Soup (갈비탕)
갈비탕 (Galbitang) is a traditional Korean soup made with beef short ribs and a variety of vegetables. It is a hearty and comforting dish that is perfect for a satisfying meal.
Ingredients
- 2 lbs beef short ribs
- 8 cups water
- 1 onion, sliced
- 3 garlic cloves, minced
- 1 daikon radish, peeled and sliced
- 2 carrots, sliced
- 4 green onions, cut into 2-inch pieces
- 1 tbsp soy sauce
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- In a large pot, bring the water to a boil.
- Add the beef short ribs and boil for 5 minutes to remove any impurities. Then, discard the water and rinse the beef under cold water.
- Return the beef to the pot and add the onion, garlic, daikon radish, and carrots.
- Pour in the soy sauce, salt, and black pepper. Cover the pot and simmer for 1.5 hours, or until the beef is tender.
- Add the green onions and simmer for an additional 10 minutes.
- Adjust the seasoning to taste and serve hot.
