Galbitang Beef Short Rib Soup (갈비탕)

Ingredients

  • 2 lbs beef short ribs
  • 8 cups water
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1 daikon radish, peeled and sliced
  • 2 carrots, sliced
  • 4 green onions, cut into 2-inch pieces
  • 1 tbsp soy sauce
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a large pot, bring the water to a boil.
  2. Add the beef short ribs and boil for 5 minutes to remove any impurities. Then, discard the water and rinse the beef under cold water.
  3. Return the beef to the pot and add the onion, garlic, daikon radish, and carrots.
  4. Pour in the soy sauce, salt, and black pepper. Cover the pot and simmer for 1.5 hours, or until the beef is tender.
  5. Add the green onions and simmer for an additional 10 minutes.
  6. Adjust the seasoning to taste and serve hot.
