Galet Kyaw (sweet And Sour Tofu)

Ingredients

  • 1 block of firm tofu, cut into cubes
  • 1/2 cup cornstarch
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1/2 cup pineapple chunks
  • 1/4 cup ketchup
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 3 tablespoons brown sugar
  • 1 tablespoon cornstarch dissolved in 2 tablespoons water
  • Salt and pepper to taste

Instructions

  1. Press the tofu cubes between paper towels to remove excess moisture.
  2. Coat the tofu cubes in cornstarch, shaking off any excess.
  3. Heat the vegetable oil in a large skillet over medium-high heat. Add the tofu cubes and cook until crispy and golden brown. Remove from the skillet and set aside.
  4. In the same skillet, add a little more oil if needed and sauté the garlic, onion, and bell peppers until they are slightly softened.
  5. Add the pineapple chunks to the skillet and cook for a few minutes.
  6. In a small bowl, mix together the ketchup, rice vinegar, soy sauce, brown sugar, and the cornstarch-water mixture. Pour the sauce into the skillet and stir until it thickens.
  7. Return the crispy tofu to the skillet and toss to coat with the sweet and sour sauce. Season with salt and pepper to taste.
  8. Serve the Galet Kyaw hot with steamed rice.
