Ingredients

  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 1 cup peanut butter
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 3 sweet potatoes, peeled and diced
  • 1 cup okra, sliced
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic, ground cumin, ground coriander, and cayenne pepper. Cook for 2 minutes, stirring constantly.
  3. Stir in the peanut butter until well combined with the onion and spice mixture.
  4. Pour in the vegetable broth and diced tomatoes. Stir to combine.
  5. Add the diced sweet potatoes and sliced okra to the pot. Season with salt and pepper.
  6. Bring the stew to a boil, then reduce the heat and let it simmer for 45-50 minutes, or until the sweet potatoes are tender.
