Ingredients
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- 1 cup peanut butter
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 3 sweet potatoes, peeled and diced
- 1 cup okra, sliced
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic, ground cumin, ground coriander, and cayenne pepper. Cook for 2 minutes, stirring constantly.
- Stir in the peanut butter until well combined with the onion and spice mixture.
- Pour in the vegetable broth and diced tomatoes. Stir to combine.
- Add the diced sweet potatoes and sliced okra to the pot. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat and let it simmer for 45-50 minutes, or until the sweet potatoes are tender.
- Adjust the seasoning if needed, then serve the Gambian Peanut Stew hot with rice or couscous.
