Gamjatang (감자탕)

감자탕 (Gamjatang) is a hearty Korean pork bone stew that is rich in flavor and packed with tender meat and vegetables. This dish is perfect for warming up on a cold day and is a popular comfort food in Koryo-saram cuisine.

Gamjatang (감자탕)

Ingredients

  • 2 lbs pork neck bones
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1/2 cup doenjang (soybean paste)
  • 1/4 cup gochugaru (Korean red pepper flakes)
  • 8 cups water
  • 2 medium potatoes, cut into chunks
  • 1 zucchini, sliced
  • 1 bunch of perilla leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine the pork neck bones, onion, garlic, doenjang, gochugaru, and water. Bring to a boil, then reduce heat and simmer for 1.5 hours, skimming off any foam that rises to the surface.
  2. Add the potatoes and continue to simmer for 20 minutes.
  3. Add the zucchini and perilla leaves, and simmer for an additional 10 minutes.
  4. Season with salt and pepper to taste before serving.
