Gamjatang (감자탕)
감자탕 (Gamjatang) is a hearty Korean pork bone stew that is rich in flavor and packed with tender meat and vegetables. This dish is perfect for warming up on a cold day and is a popular comfort food in Koryo-saram cuisine.
Ingredients
- 2 lbs pork neck bones
- 1 onion, chopped
- 4 garlic cloves, minced
- 1/2 cup doenjang (soybean paste)
- 1/4 cup gochugaru (Korean red pepper flakes)
- 8 cups water
- 2 medium potatoes, cut into chunks
- 1 zucchini, sliced
- 1 bunch of perilla leaves
- Salt and pepper to taste
Instructions
- In a large pot, combine the pork neck bones, onion, garlic, doenjang, gochugaru, and water. Bring to a boil, then reduce heat and simmer for 1.5 hours, skimming off any foam that rises to the surface.
- Add the potatoes and continue to simmer for 20 minutes.
- Add the zucchini and perilla leaves, and simmer for an additional 10 minutes.
- Season with salt and pepper to taste before serving.
