Gamjatang Spicy Pork Bone Soup (감자탕)

Ingredients
- 2 lbs pork neck bones
- 1/2 cup Korean red pepper flakes (gochugaru)
- 8 cups water
- 1 large onion, sliced
- 4 garlic cloves, minced
- 1/4 cup doenjang (soybean paste)
- 1/4 cup gochujang (red chili paste)
- 2 medium potatoes, cut into chunks
- 1 zucchini, sliced
- 1 bunch of perilla leaves (kkaennip)
- 1 green onion, chopped
- Salt and pepper to taste
Instructions
- In a large pot, add the pork bones and enough water to cover them. Bring to a boil and cook for 10 minutes. Then, drain and rinse the bones under cold water to remove any impurities.
- Return the cleaned bones to the pot and add 8 cups of water, Korean red pepper flakes, onion, and garlic. Bring to a boil, then reduce heat and simmer for 1 hour.
- Stir in the doenjang and gochujang, and continue to simmer for another 30 minutes.
- Add the potatoes, zucchini, and perilla leaves to the pot. Simmer for an additional 20 minutes, or until the pork is tender and the vegetables are cooked through.
- Season with salt and pepper to taste, and garnish with chopped green onions before serving.
