Gamjatang Spicy Pork Bone Soup (감자탕)

Ingredients

  • 2 lbs pork neck bones
  • 1/2 cup Korean red pepper flakes (gochugaru)
  • 8 cups water
  • 1 large onion, sliced
  • 4 garlic cloves, minced
  • 1/4 cup doenjang (soybean paste)
  • 1/4 cup gochujang (red chili paste)
  • 2 medium potatoes, cut into chunks
  • 1 zucchini, sliced
  • 1 bunch of perilla leaves (kkaennip)
  • 1 green onion, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, add the pork bones and enough water to cover them. Bring to a boil and cook for 10 minutes. Then, drain and rinse the bones under cold water to remove any impurities.
  2. Return the cleaned bones to the pot and add 8 cups of water, Korean red pepper flakes, onion, and garlic. Bring to a boil, then reduce heat and simmer for 1 hour.
  3. Stir in the doenjang and gochujang, and continue to simmer for another 30 minutes.
  4. Add the potatoes, zucchini, and perilla leaves to the pot. Simmer for an additional 20 minutes, or until the pork is tender and the vegetables are cooked through.
  5. Season with salt and pepper to taste, and garnish with chopped green onions before serving.
