Ingredients
- 1 pound green beans, trimmed and cut into 2-inch pieces
- 8 ounces ground pork
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 2 teaspoons ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon Shaoxing wine (or dry sherry)
- 1 teaspoon sugar
- 1 teaspoon Sichuan peppercorns, toasted and ground
- 1 teaspoon chili flakes
- Salt to taste
Instructions
- Blanch the green beans in boiling water for 2 minutes, then drain and set aside.
- Heat the vegetable oil in a wok or large skillet over high heat. Add the ground pork and stir-fry until browned and cooked through.
- Add the garlic and ginger to the wok and stir-fry for 1 minute.
- Add the blanched green beans, soy sauce, Shaoxing wine, sugar, Sichuan peppercorns, and chili flakes to the wok. Stir-fry for 3-4 minutes until the beans are tender-crisp.
- Season with salt to taste and serve hot.
