Ingredients

  • 1 pound green beans, trimmed and cut into 2-inch pieces
  • 8 ounces ground pork
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 2 teaspoons ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 1 teaspoon sugar
  • 1 teaspoon Sichuan peppercorns, toasted and ground
  • 1 teaspoon chili flakes
  • Salt to taste

Instructions

  1. Blanch the green beans in boiling water for 2 minutes, then drain and set aside.
  2. Heat the vegetable oil in a wok or large skillet over high heat. Add the ground pork and stir-fry until browned and cooked through.
  3. Add the garlic and ginger to the wok and stir-fry for 1 minute.
  4. Add the blanched green beans, soy sauce, Shaoxing wine, sugar, Sichuan peppercorns, and chili flakes to the wok. Stir-fry for 3-4 minutes until the beans are tender-crisp.
  5. Season with salt to taste and serve hot.
