Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp coconut oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas
  • 1 can (14 oz) coconut milk
  • 2 limes, juiced and zested
  • Salt and pepper to taste

Instructions

  1. Heat coconut oil in a large pan over medium-high heat.
  2. Add the shrimp and stir-fry for 2-3 minutes until pink and cooked through. Remove shrimp from the pan and set aside.
  3. In the same pan, add the bell peppers and snap peas. Stir-fry for 2-3 minutes until slightly tender.
  4. Pour in the coconut milk, lime juice, and lime zest. Bring to a simmer and let it cook for 3-4 minutes.
  5. Return the cooked shrimp to the pan and toss to coat with the coconut-lime sauce. Season with salt and pepper to taste.
  6. Remove from heat and serve the Garamut Bilong Samting hot, over steamed rice or noodles.
