Garamut Bilong Samting, or Coconut and Lime Shrimp Stir-Fry, is a popular dish in Melanesian cuisine. This flavorful stir-fry combines the richness of coconut milk with the zesty tang of lime, creating a delicious and aromatic dish that is perfect for a quick and easy meal.
Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tbsp coconut oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snap peas
- 1 can (14 oz) coconut milk
- 2 limes, juiced and zested
- Salt and pepper to taste
Instructions
- Heat coconut oil in a large pan over medium-high heat.
- Add the shrimp and stir-fry for 2-3 minutes until pink and cooked through. Remove shrimp from the pan and set aside.
- In the same pan, add the bell peppers and snap peas. Stir-fry for 2-3 minutes until slightly tender.
- Pour in the coconut milk, lime juice, and lime zest. Bring to a simmer and let it cook for 3-4 minutes.
- Return the cooked shrimp to the pan and toss to coat with the coconut-lime sauce. Season with salt and pepper to taste.
- Remove from heat and serve the Garamut Bilong Samting hot, over steamed rice or noodles.
