Ingredients

  • 2 cups gari (cassava flakes)
  • 1 cup water
  • 1 onion, chopped
  • 2 tomatoes, diced

Instructions

  1. Place the gari in a bowl and sprinkle with water. Use a fork to fluff the gari and set aside.
  2. Heat the vegetable oil in a pan over medium heat. Add the chopped onions and sauté until translucent.
  3. Add the diced tomatoes and cook until softened.
  4. Stir in the fluffed gari and mix well with the vegetables. Cook for 5-7 minutes, stirring occasionally.
  5. Season with salt to taste and serve hot.
