Ingredients
- 2 cups gari (cassava flakes)
- 1 cup water
- 1 onion, chopped
- 2 tomatoes, diced
- 1/2 cup vegetable oil
- Salt to taste
Instructions
- Place the gari in a bowl and sprinkle with water. Use a fork to fluff the gari and set aside.
- Heat the vegetable oil in a pan over medium heat. Add the chopped onions and sauté until translucent.
- Add the diced tomatoes and cook until softened.
- Stir in the fluffed gari and mix well with the vegetables. Cook for 5-7 minutes, stirring occasionally.
- Season with salt to taste and serve hot.
