Garibaldi biscuits are a classic British treat, featuring a layer of currants sandwiched between two layers of sweet, crunchy biscuit. These biscuits are perfect for enjoying with a cup of tea or coffee.

Garibaldi Biscuits

Ingredients

  • 225g plain flour
  • 1 tsp baking powder
  • 85g cold unsalted butter, diced
  • 55g caster sugar, plus extra for sprinkling
  • 1 egg, beaten
  • 3 tbsp milk
  • 150g currants

Instructions

  1. Preheat the oven to 200°C (180°C fan).
  2. Sift the flour and baking powder into a bowl, then rub in the butter until the mixture resembles fine breadcrumbs.
  3. Stir in the sugar, then add the beaten egg and milk to make a dough.
  4. Roll out half the dough on a lightly floured surface to a rectangle about 30 x 20cm.
  5. Sprinkle half the currants over the dough, then fold the dough in half and roll out again to the same size.
  6. Cut into 12 squares and transfer to a baking sheet.
  7. Repeat with the remaining dough and currants.
  8. Sprinkle the biscuits with a little extra sugar and bake for 12 minutes until golden.
