Ingredients
- 2 cups stone-ground grits
- 4 cups water
- 1 teaspoon salt
- 1/2 cup unsalted butter
- 1/2 cup all-purpose flour
- 4 cups chopped mixed greens (such as kale, collard greens, and spinach)
- 2 cups milk
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 large eggs, beaten
- 1/4 teaspoon black pepper
Instructions
- In a large pot, bring the water to a boil and stir in the grits and salt. Reduce heat to low, cover, and simmer for 20 minutes, stirring occasionally.
- Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
- In a separate pot, melt the butter over medium heat. Stir in the flour to make a roux, cooking for 2 minutes.
- Gradually whisk in the milk until smooth, then stir in the mixed greens. Cook until the greens are wilted, about 5 minutes.
