Gastonia Grits And Greens Casserole

Ingredients

  • 2 cups stone-ground grits
  • 4 cups water
  • 1 teaspoon salt
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 4 cups chopped mixed greens (such as kale, collard greens, and spinach)
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs, beaten
  • 1/4 teaspoon black pepper

Instructions

  1. In a large pot, bring the water to a boil and stir in the grits and salt. Reduce heat to low, cover, and simmer for 20 minutes, stirring occasionally.
  2. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  3. In a separate pot, melt the butter over medium heat. Stir in the flour to make a roux, cooking for 2 minutes.
  4. Gradually whisk in the milk until smooth, then stir in the mixed greens. Cook until the greens are wilted, about 5 minutes.
  5. Remove the pot from the heat and stir in the cheddar and Parmesan cheeses, beaten eggs, and black pepper.
  6. Pour the cooked grits into the prepared baking dish, then spread the greens mixture over the top.
  7. Bake in the preheated oven for 30 minutes, or until the casserole is set and the top is golden brown.
  8. Let the casserole cool for 5 minutes before serving.
