Gastonia Gumbo

Ingredients
- 1/2 cup vegetable oil
- 1/2 cup all-purpose flour
- 1 onion, chopped
- 1 green bell pepper, chopped
- 3 celery stalks, chopped
- 3 garlic cloves, minced
- 1 pound andouille sausage, sliced
- 1 pound chicken breast, diced
- 6 cups chicken broth
- 1 can (14 oz) diced tomatoes
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon Cajun seasoning
- Salt and pepper to taste
- 3 cups cooked white rice
- Chopped green onions for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Gradually whisk in the flour to make a roux, stirring constantly until it reaches a dark brown color.
- Add the onion, bell pepper, celery, and garlic to the roux, and cook for 5 minutes until the vegetables are tender.
- Add the andouille sausage and chicken to the pot, and cook for another 5 minutes.
- Pour in the chicken broth and diced tomatoes. Add the bay leaves, thyme, Cajun seasoning, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 1 hour.
- Serve the Gastonia Gumbo over cooked white rice, and garnish with chopped green onions.
