Gastonia Gumbo

Ingredients

  • 1/2 cup vegetable oil
  • 1/2 cup all-purpose flour
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 3 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 pound andouille sausage, sliced
  • 1 pound chicken breast, diced
  • 6 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • 3 cups cooked white rice
  • Chopped green onions for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Gradually whisk in the flour to make a roux, stirring constantly until it reaches a dark brown color.
  2. Add the onion, bell pepper, celery, and garlic to the roux, and cook for 5 minutes until the vegetables are tender.
  3. Add the andouille sausage and chicken to the pot, and cook for another 5 minutes.
  4. Pour in the chicken broth and diced tomatoes. Add the bay leaves, thyme, Cajun seasoning, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 1 hour.
  5. Serve the Gastonia Gumbo over cooked white rice, and garnish with chopped green onions.
