Gazpacho-inspired Pasta Salad

Ingredients
- 8 oz pasta
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1 small red onion, finely chopped
- 2 cups cherry tomatoes, halved
- 1/4 cup extra virgin olive oil
- 3 tbsp red wine vinegar
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions. Drain and rinse with cold water.
- In a large bowl, combine the cooked pasta, cucumber, red bell pepper, red onion, and cherry tomatoes.
